Sage (Salvia officinalis) has been used for hundreds of years both as a culinary and therapeutic herb. Sage is stated to possess carminative, antispasmodic, antiseptic, astringent and antihydrotic properties. The key constituents are organic acids, polyphenols, terpenes and volatile oils. Within the volatile oils, rosmarinic acid and carvacrol would appear to exert antioxidant properties.
