Early Beginnings!

Vitamin A was one of the earliest vitamins to have been identified. It is a fat-soluble vitamin which exists as retinol or carotene (provitamin A). Fat-soluble vitamins only dissolve in oils or fats. Retinol is found only in animal foods whereas carotene or carotenoids are found in vegetables and plants. These carotenoids are converted into retinol by the body, as it needs them. Vitamin A is important for it?s role in healthy eyes and vision and is essential for growth, being involved in the maintenance of healthy skin, hair and nails. As Vitamin A is needed to make some of the protein blocks involved in the development and health of the body?s cells, it is vital for overall growth and development.

SO WHAT ARE CAROTENOIDS?

Carotenoids are a large group of yellow, orange and red plant pigments providing much of nature?s palette, from the rich tones of autumn leaves to the bright hues of fruits and vegetables such as tomatoes, apricots, peppers and, of course, carrots. Foods such as these form a large part of the healthy Mediterranean diet, and while scientists have yet to establish precisely how they protect health, one theory gaining support is that the carotenoids they contain may well provide more than just their colour. Between 500 and 600 carotenoids have been identified, although only 60 or so are found in food and around 20 in the modern diet. The most common of these - and those believed to be most significant to human health - include beta-carotene, alpha-carotene, cryptoxanthin, zeaxanthin, lycopene and lutein.
Vitamin A and the carotenoids are also important antioxidants.

Antioxidants play a significant role in the body?s defences against free radicals. Free radicals are highly reactive molecules produced in the body as a natural side effect of our own metabolism or in response to external factors, such as pollution or over exposure to sunlight. As long as antioxidants and free radicals are in balance these reactive molecules do not present a problem, however free radicals in excess of our natural defences ability to combat them could lead to cell and tissue damage.
